CUPCAKES

Ingredients

175g (6oz) self-raising flour
1½tsp baking powder
175g (6oz) butter, softened
175g (6oz) caster sugar
3 large eggs
2 tbsp milk

For the icing
150g (5oz) butter
300g (10oz) icing sugar
1tbsp milk
¼tsp vanilla extract
Food colouring
sprinkles

Method

Heat the oven to 180°C/350°F Gas mark 4.

Line a muffin tray with 12paper muffin cases.

Sift the flour and baking powder into a bowl and add the butter, sugar, eggs and milk. Beat until well mixed.

Spoon into the cases and bake for about 20 minutes until firm. Cool on a rack.

To make the icing, beat the butter until soft. Add the icing sugar and mix. Add the milk and vanilla extract and beat until light and fluffy.

Divide into different bowls and add a few drops of different food colourings to each bowl and mix.

Ice the cakes when cool and decorate with sprinkles.
