BANANA CAKE

Ingredients

2 ripe bananas
170g castor sugar
170g self-raising flour
170g margarine
3 eggs
Vanilla essence

Method

Heat oven to 150°C (Gas mark 3).

Mix all the ingredients in a bowl, transfer to a prepared 1lb loaf tin. Put on a baking tray in the centre of oven and cook for 1 hour.

Remove from oven and leave to cool in the tin for awhile then turn out onto a cooling rack.
