TIRAMASU

Ingredients

200g Sponge fingers
10 fl oz strong black coffee
8 tbsp Tia Maria
400g carton Fresh custard
250g Mascarpone cheese
142ml Whipping cream
Cocoa powder (to dust)

Method

Pour strong black coffee and Tia Maria into a jug and stir. Arrange half the sponge fingers in the bottom of a deep glass dish and pour half coffee mixture over and allow to soak for 10mins.

In a separate bowl add custard to the mascarpone cheese and beat together until smooth, spread half over the sponge fingers.

Dip remaining sponge fingers into the coffee mixture and layer on top followed by the rest of the cheese mixture.

Chill for 2 - 3 hours.
