BEEF & POTATO CURRY

Ingredients

1kg stewing steak, cubed
2oz ghee
2 onions, sliced
1 garlic clove, chopped
1½ inch piece fresh ginger, chopped
2 green chilli, deseeded, chopped
2 tbs cardamom seed, crushed
4 cloves
1 tsp salt
2 bay leaves
1lb potatoes
1tsp turmeric powder
1tbs coriander powder
½tsp chilli powder
1tsp jeera (cumin seed)
12 fl oz water

Method

Heat the ghee in a saucepan until hot then add the onions and garlic and cook until lightly browned.

Add ginger and chillies and all the other spices and stir for 4 minutes, add a little water if it becomes too dry.

Stir in the meat cubes and cook until brown all over.

Now add the bay leaves and the rest of the water and bring to boil. Turn down the heat and simmer for 1¼ hours.

Bring back to the boil, add the potatoes then simmer for 45 minutes or until the potatoes are cooked. Serve with boiled rice.
