SAG GOSHT (SPINACH WITH LAMB)

Ingredients

2 oz ghee
1½ tsp mustard seed
2 garlic cloves (crushed)
2 tbs cardamom seed (crushed)
1 tbs coriander powder
1½ inch fresh ginger (grated)
2 lb lamb (diced)
1 tsp sugar
! Onion (chopped)
3 green chillies (seeded & chopped)
1 tsp turmeric
2 lb spinach washed and chopped
1½ tsp salt
½ tsp ground black pepper
2 tbs plain yoghurt

Method

Preheat the oven to 150°c (gas mark 2)

In a flameproof casserole dish heat up the ghee, stir in the mustard seed and stir until they stop splattering.

Add the garlic, cardamom, coriander and ginger and stir for 1 minute then add the onions, chillies and sugar. Stir until the onions are golden brown and soft.

Put in the spinach and simmer for 3 minutes until the spinach has wilted then add the rest of the ingredients and stir to well. Cover, reduce the heat and simmer for 1 hour, remove from heat, uncover and mix well.

Cover the casserole and place in the centre of oven and cook for 30 minutes.
