CHICKEN PULAO

Ingredients
2 oz ghee or oil
1 large onion (sliced)
2 garlic cloves (crushed)
2 green chillies (chopped)
1½ Kg small chicken thighs
1 tsp turmeric
½ tsp chilli powder
1 tbs coriander powder
1½ tsp salt
½ tsp black pepper
5 floz plain yoghurt
Juice of one lemon
12 floz boiling water
12 oz long grained rice ( soaked for 30 min and drained)

Method
In a large pan heat the ghee or oil than add the onions and fry until soft, add the ginger, garlic and green chillies and cook for a further 4 minutes.
Add the chicken and cook until well browned then add the spices, salt, pepper, lemon juice and yoghurt and stir well.
Cover and reduce heat to low and simmer for 40 minutes then check to see if chicken is cooked, if not cook for a further 5 minutes.
Stir in the rice, add the water and bring to boil. Cover the pan, reduce the heat to low and simmer for 15/20 minutes until all the water has been absorbed and the rice is tender.
