BOILED FRUIT CAKE |
Ingredients
½ pint of milk
½ lb sugar
½ lb margarine
½ tsp salt
1 lb mixed fruit
1 lb self raising flour, sieved
1 tsp baking powder
4 eggs

Method
Preheat oven to 150°c (gas mark 2)
Line a 12-hole fairy cake tin with paper cases.
Put the milk, sugar, margarine, salt and mixed fruit into a saucepan and slowly bring to the boil, stirring until the sugar has dissolved and all ingredients are well combined.

Remove from heat and allow to cool.
Beat in the eggs then gently fold in the flour. Put the ingredients into a large well greased tin and place in the centre of the oven.
Cook for 1½ to 2 hours. Remove from oven and allow to cool for 10 minutes then remove from tin and place on wire rack to finish cooling.
