BOILED FRUIT CAKE

Ingredients

½ pint of milk
½ lb sugar
½ lb margarine
½ tsp salt
1 lb mixed fruit
1 lb self raising flour, sieved
1 tsp baking powder
4 eggs

Method

Preheat oven to 150°c (gas mark 2)

Line a 12-hole fairy cake tin with paper cases.

Put the milk, sugar, margarine, salt and mixed fruit into a saucepan and slowly bring to the boil, stirring until the sugar has dissolved and all ingredients are well combined. h

Remove from heat and allow to cool.

Beat in the eggs then gently fold in the flour. Put the ingredients into a large well greased tin and place in the centre of the oven.

Cook for 1½ to 2 hours. Remove from oven and allow to cool for 10 minutes then remove from tin and place on wire rack to finish cooling.
