CHICKEN & SAUSAGE CASSEROLE.

Ingredients

One 3.5 lb chicken cut in pieces . (or chicken breasts)
6 sausage (Cumberland or Herb) cut into 1 inch pieces
1/2 cup olive oil
1 large Spanish onion. chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
3-4 large garlic cloves minced
2 inch chorizo sausage thinly sliced
Note: I prefer Italian sausage
16 oz. can plum tomatoes
1 Tbsp. Hungarian paprika
1-2 bay leaves
1/2 cup white wine
1 cups chicken stock
1 tsp. salt
1 tsp. black pepper
1 bunch of Italian flat leafed parsley, chopped

Method

Preheat the oven to Gas mark 4 (375°F.)

Heat olive oil in a large frying pan. Carefully brown all of the well seasoned (salt and peppered) chicken pieces. Should take about 15 minutes. Remove from heat and place in a large casserole dish.

Add sausage and chorizo to pan and cook for four to five minutes sausage is golden brown, remove from heat and put into casserole dish.

Add onion, peppers and garlic and cook for 5 minutes, sprinkle on the paprika and salt and mix well. Add wine and reduce for a few minutes.

Add tomatoes, chicken stock and bay leaves and bring the mixture to the boil then turn down the heat and simmer for5 minutes.

Pour the contents of the frying pan into the casserole, cover with lid or tin foil and place in a 375 degree oven for 1 hour. Garnish with chopped parsley and serve with rice.
