SPICY CHICKEN BAKE.

Ingredients
6 chicken fillets, halved
2 gammon steaks, cut onto bite size pieces
6 sausages of choice, roughly chopped
1 red chilli, deseeded and finely chopped
2 red peppers, sliced
2 onions, thinly sliced
2 garlic cloves, crushed
6 plumb tomatoes, quartered
2 tbsp red wine vinegar
400g tin chopped tomatoes
500g carton passata

Method
Preheat the oven to 200°C (Gas mark 6)
Put some olive oil into a flameproof oven dish and lightly brown the chicken on the hob for 3 to 4 minutes. Add the gammon, sausage, garlic, red wine vinegar and
chilli and stir well.
Cook for 5 minutes then add the onion, peppers, canned tomatoes, passata and 7floz of water. Stir well, cover with lid and place in the oven.
Cook for 1hr 30 mins, adding the quartered plum tomatoes and more water if needed half way through the cooking time.
