PORK & PINEAPPLE CASSEROLE

Ingredients

2lb Lean Pork, Cubed
1½ oz Flour
1½ Tablespoons Oil
1 Large Onion, Chopped
I Garlic Clove, Crushed
2 Tablespoons Curry Powder
1 Tablespoon Paprika
1½ Pints Chicken Stock
1 Tablespoon Mango Chutney
1 Teaspoon Worcestershire Sauce
1lb Tin Pineapple Cubes With Syrup
2 Bay Leaves

Method

Preheat oven to gas mark 5

Put the flour in a plastic bag, add the meat and shake until the meat is well coated.

Heat the oil in a frying pan and brown the meat. Remove the meat from the pan and add the onion and garlic and fry until soft.

Stir in the curry powder and paprika and fry for two minutes. Return the meat to the pan, stir well and cook for another five minutes.

Add the rest of the ingredients, bring to boil while stirring and then transfer to a casserole dish.

Place the casserole dish in the oven and cook for two hours.
Remove bay leaves and serve.
