SEEKH KABABS

Ingredients

3 teaspoons sunflower oil
1½ lb finely minced meat. (Lamb or beef)
2 oz fresh white breadcrumbs
1 inch fresh ginger, grated
1 green chilli finely chopped
2 garlic cloves crushed
1 teaspoon ground cumin
½ teaspoon chilli powder
½ teaspoon salt
1 teaspoon finely grated lemon rind
1 teaspoon lemon juice

Method

Lightly grease 8 thick skewers with the butter and set aside. Add all the remaining ingredients to a mixing bowl and with your hands mix and kneed the ingredients together.

Divide the meat into 16 equal portions. With wetted hands press 8 portions on to the skewers in pencil shapes about 3 inches in length. Preheat the grill to high and place the skewers under the heat and cook turning occasionally for 6 minutes or until the kebabs are cooked through.

Slide the kebabs from the skewers and keep warm while you cook the remaining kebabs. Serve Immediately with a tomato and onion salad.
