DOS
(Beef and Rice Stew)

Ingredients

2 tablespoons of butter
1 green chilli, chopped
3 lb stewing steak, cubed
1 bay leaf
1½ teaspoons salt
1 teaspoon cayenne pepper
½ teaspoon ground turmeric
½ teaspoon ground cumin
½ teaspoon chilli powder
½ teaspoon ground coriander
4 fl. Oz vegetable oil
1 onion, sliced
2 tomatoes, blanched, peeled and quartered
1 large green pepper, chopped
2¼ pints water
9 oz long grain rice, washed and soaked

Method

In a saucepan, melt the butter over a moderate heat. When the foam subsides add the chopped chill and cook for 2 minutes. Add the steak cubes and brown them on all sides. Add the bay leaf and sprinkle half the salt, cayenne, turmeric, cumin, chilli powder and coriander over the meat. Add just enough water to cover the meat and bring to the boil. Reduce the heat and simmer for 1 hour or until meat is tender.

In a saucepan heat the oil over a moderate heat then add the onions and cook them for 5 minutes. Add the green pepper, tomatoes and the rest of the seasoning and cook for a further 10 minutes stirring occasionally.

Add the meat and its cooking liquid to the saucepan the add the water and the rice. Stir well.

Cover the pan and bring to boil then reduce the heat and simmer, stirring occasionally, for a further 25 minutes or until the rice is cooked.

Serve at once with green vegetables.
