DEVILLED PORK RIBS

Ingredients

2 oz butter
1 tablespoon Worcestershire sauce
1 tablespoon tomato puree
2 shallots, finely chopped
1 teaspoon mustard powder
1 teaspoon curry powder
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon salt
3 lb lean spareribs of pork
2 oz flour

Method

Preheat oven to gas mark 6 (400°F)

Place the butter in a bowl then add the Worcestershire sauce, paprika, tomato puree, shallots, mustard, curry powder, black pepper and half the salt. With a fork mix well and set aside.

With a knife score the ribs on their meaty side, coat the ribs with the flour and sprinkle on the rest of the salt. Place the ribs in a casserole, meaty side up and coat with the butter mixture.

Place in oven an cook for 1 hour. Reduce heat to gas mark 4 (350°F) and cook for a further hour or until meat is tender. Serve immediately.
