CABBAGE CURRY.

Ingredients

1 lb cabbage, sliced finely
2 tablespoon oil
1 teaspoon turmeric
1 small onion finely diced
1 small chilli finely chopped
1 teaspoon ground coriander
1 inch fresh ginger grated
1 garlic clove, chopped
1 teaspoon ground cumin
2 bay leaves
1 tablespoon curry paste.
salt to taste
Finely chopped coriander to garnish

Method

Heat the oil in a frying pan then add the onion and cook for 2 minutes. Add the cabbage, garlic and chilli and cook, stirring occasionally for 5 minutes.

Add the cumin, ginger, turmeric, curry paste and bay leaves. Stir and fry until the spices are well blended with the cabbage. Pour in half cup water mix well and add salt to taste.

Simmer over a low heat, stirring occasionally until the cabbage is soft and most of the liquid has evaporated. Remove from the heat, sprinkle with chopped coriander and serve.
