HUNGERIAN GOULASH

Ingredients

4 tablespoons Vegetable oil
2lb stewing steak cut into 1inch cubes
2 large onions thinly sliced
2 red peppers seeded and chopped
2 garlic cloves finely chopped
2 tablespoons paprika
1 14oz can of tomatoes
2 large potatoes cut into 1inh cubes
2 tablespoons tomato paste
1 tablespoon plain flour
1¼ cups of beef stock
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried coriander leaf
1 tablespoon black pepper
Salt to taste

Method

Preheat the oven to gas mark 4.

Heat two tablespoons of oil in a large frying pan the add the meat. Sprinkle over the black pepper then fry the meat until brown all over. Remove from heat and set aside.

Add the remaining oil to the frying pan and add the onions, peppers and garlic. Cook over a moderate heat until the onions are translucent but not brown. Add the paprika and stir the mixture for one minute. Remove from heat and set aside.

Put the potatoes into the frying pan and cook, stirring occasionally until lightly browned. Remove from heat and set aside.

Add the tomatoes and tomato paste to the frying pan. Dissolve the flour in the beef stock then add to the tomatoes and bring to the boil. Stir in the thyme, coriander and bay leaf and add salt to taste. Simmer for five minutes.

Put the meat, onion mixture and potato into a large casserole and mix well. Pour the tomato mixture over the top, put the lid on the casserole and place in the centre of the oven. Cook for 2 hours until the meat is very tender and the potato soft. Remove from oven and serve.
